A unique setting at the service of wine

In Bocos de Duero, at an altitude of 745 meters above sea level, the Cantovera vineyards are grown on 13.5 hectares of carefully selected plots. Located on sandy-loam slopes with abundant boulders, these soils allow natural aeration of the vines and favor optimal grape ripening.

Soil and climate

The type of soil is key to our identity: the higher areas are dominated by calcareous soils that provide minerality, while the slopes closer to the river are dominated by deep clays that provide structure. The cool nights and long sunny days of Ribera del Duero promote slower ripening, which favors the preservation of natural acidity and a greater concentration of aromas.

The climate is continental: cold winters, dry summers and a marked day-night temperature range, conditions that directly affect the quality of the grapes.

Varieties and planting

At Cantovera we grow mainly Tempranillo, Merlot and Cabernet Sauvignon varieties, suitable for the Ribera del Duero environment and worked with controlled production to ensure aromatic density and balance in the glass. Vine training, pruning and yield management are adjusted to quality objectives, prioritizing the expression of terroir over volume.

Vineyard management

Viticulture is developed under minimum intervention protocols that preserve the health of the soil and the plant. During the winter, manual pruning is carried out, while mulching and the incorporation of natural compost contribute to the balance of the vineyard’s ecosystem. We work to promote soil stability and biodiversity, an approach that supports plantation longevity and fruit quality.

Commitment to quality

The proximity of our vineyards to the winery favors a quick reception of the grapes, which preserves their condition from the field to fermentation. Each plot has detailed technical monitoring: flowering date, soil nutrients, yield per vine and optimum harvest time. This level of control is an essential part of the Cantovera project and contributes to consistency vintage after vintage.
